Rinse arbi thoroughly under running water and boil until soft, then peel and cut into small pieces.
Heat oil in a pan, add mustard seeds, and let them splutter.
Add sliced onions and green chilies and sauté until the onions turn golden brown.
Add ginger garlic paste and sauté for a minute until the raw smell goes away.
Mix in the turmeric, coriander powder, cumin powder, and chili powder, and cook the spices for a few minutes.
Add the boiled arbi to the pan and stir well to coat it with the spices.
Pour in tomato puree and some water to achieve the desired consistency, and let it simmer for 10 minutes.
Finish by stirring in garam masala and fresh coriander leaves for garnish.
