Avial is a traditional South Indian dish full of vegetables and coconut, seasoned with coconut oil and curry leaves. This dish is prominent in Kerala and Tamil Nadu, known for its subtle flavors and nutritious content.

How to Make Avial

Wash and cut all the vegetables into lengthwise pieces.

Cook the vegetables with turmeric and salt, adding enough water to cover them.

Grind the coconut, green chilies, and cumin seeds into a coarse paste.

Once vegetables are cooked, add the coconut paste and stir well.

Simmer on a low flame for 5 to 7 minutes until the raw smell of the coconut disappears.

Turn off the flame and add whisked yogurt. Mix well ensuring the yogurt blends in without curdling.

Heat coconut oil in a small pan, add mustard seeds and let them splutter, then add curry leaves.

Pour this tempering over the cooked vegetables and mix well.
