How to Make French Onion Soup
- 1
Heat a large pot over medium heat. Add butter and olive oil.
- 2
Add sliced onions and a pinch of salt. Cook, stirring occasionally, until onions are caramelized and dark golden brown, about 25-30 minutes.
- 3
Sprinkle flour over onions and cook, stirring, for 2 minutes.
- 4
Add beef broth slowly, stirring continuously. Add thyme and bay leaves.
- 5
Simmer the soup for about 30 minutes. Season with salt and pepper to taste.
- 6
Preheat the oven broiler. Place the slices of bread on a baking sheet and toast under the broiler until golden brown.
- 7
Place ovenproof soup bowls or crocks on a baking sheet. Fill each with hot soup, top with toasted bread slices and a generous amount of grated Gruyere cheese.
- 8
Broil until the cheese is bubbly and golden brown, about 3-4 minutes.
- 9
Serve hot.
