Lauki Kofta is a delicious Indian dish consisting of spiced bottle gourd dumplings immersed in a tangy tomato-based curry. This dish is not only flavorful but also offers a good source of nutrition.
Grate the lauki and squeeze out the excess water.
Mix lauki with gram flour, coriander leaves, green chili, ginger, salt, and garam masala.
Shape into balls and deep fry until golden brown. Set aside.
Heat oil in a pan. Add cumin seeds and asafoetida.
Add onion and ginger-garlic paste and sauté until golden.
Mix in tomato purée, salt, red chili powder, turmeric powder, coriander powder, and cook until oil separates.
Add water and bring the mixture to a boil.
Simmer for 10 minutes, then add the fried lauki koftas.
Cook for an additional 5 minutes. Finish with garam masala and fresh coriander.
Serve hot with rice or chapatis.
