Panettone is a traditional Italian Christmas bread known for its fluffy texture and sweet, fruity flavor. It's enjoyed by many during the festive season and makes for a delightful treat or a special breakfast.
In a small bowl, dissolve yeast in warm water and let sit until frothy, about 10 minutes.
In a large bowl, combine flour, sugar, and salt. Add the yeast mixture, eggs, egg yolks, and vanilla extract and mix until a soft dough forms.
Gradually add softened butter to the dough, mixing well after each addition until it's fully incorporated.
Transfer the dough to a floured surface and knead until smooth and elastic, about 10 minutes.
Place the dough in a greased bowl, cover with a cloth, and let rise in a warm place until doubled in size, about 2 hours.
Punch down the dough and add candied fruits and raisins. Knead the fruits into the dough until evenly distributed.
Shape the dough into a round loaf and place in a paper panettone mold. Let it rise again until it doubles in size, about 1 hour.
Preheat oven to 180°C (350°F).
Brush the top of the dough with melted butter and bake for 40-50 minutes or until golden brown.
Remove from oven and let cool before slicing.
