A classic Italian dish, Spaghetti Carbonara is a rich and creamy pasta that combines eggs, cheese, pancetta, and black pepper for a decadently delicious meal.
Bring a large pot of salted water to a boil and cook spaghetti until al dente, usually about 8-10 minutes.
While the pasta cooks, heat a large skillet over medium heat and add the pancetta. Cook until crispy, about 6-8 minutes.
In a mixing bowl, whisk together eggs, Parmesan cheese, and ground black pepper.
Drain the pasta, reserving 1/2 cup of pasta water. Add the hot spaghetti to the skillet with pancetta.
Remove skillet from heat and quickly pour the egg mixture over the pasta, stirring vigorously to combine and create a creamy sauce. Add reserved pasta water, a little at a time, to reach desired consistency.
Serve immediately garnished with additional Parmesan and a sprinkle of black pepper.
