
Arbi Patra (or Patrode) is a traditional Indian snack made from colocasia leaves (arbi ke patte) coated with a spicy, tangy chickpea flour batter, rolled up, steamed, and then sliced into rounds that are pan-fried until crisp.
Wash and dry the colocasia leaves.
Prepare a paste of chickpea flour, tamarind paste, jaggery, turmeric, red chili powder, coriander powder, salt, and a little water to make a thick batter.
Spread the batter over the green side of each leaf. Place another leaf on top and repeat the layering.
Roll the leaves tightly from the base to the tip. Steam the rolls for about 20-25 minutes.
Once cooled, slice the rolls into half-inch rounds.
Heat oil in a pan and shallow fry the rounds till they are golden and crisp on both sides.
Serve hot with coriander chutney or ketchup.
