Beans Thoran is a vibrant and healthy South Indian stir-fried dish made with green beans and grated coconut, seasoned with mustard seeds and curry leaves. It's commonly served as a side dish and is perfect for a nutritious meal.
Heat oil in a pan and add mustard seeds.
Once the mustard seeds start spluttering, add urad dal and wait until it turns golden brown.
Add finely chopped onions and green chilies to the pan and sauté until onions become translucent.
Add green beans to the pan and stir well.
Cover the pan and cook the beans on low heat until they are tender but still crisp.
Add salt, turmeric powder, and grated coconut. Mix well.
Increase the heat to high and stir-fry for a few minutes until the mixture is dry and fragrant.
Garnish with fresh curry leaves before serving.
