How to Make Chole Bhature

   Rinse the chickpeas thoroughly and soak in water overnight.

   Drain the chickpeas and transfer to a pressure cooker. Add water, salt, tea bag, and cook under pressure for about 4-5 whistles until they are soft.

   Heat oil in a pan. Add cumin seeds, and after they splutter, add onions and fry until golden brown.

   Add ginger, garlic, and green chilies to the onions and sauté for a few minutes.

   Stir in the chopped tomatoes, chole masala, red chili powder, and turmeric powder. Cook until the oil starts to separate.

   Add the boiled chickpeas, mashed potato, garam masala, and salt. Cook for 10-15 minutes. Add water if the mixture is too dry.

   For the Bhature, combine flour, semolina, sugar, baking powder, yogurt, and oil in a bowl. Gradually add water and knead into a soft dough. Cover and let it rest for about 2 hours.

   Divide the dough into equal portions. Roll each portion into a ball and then flatten it into a circular shape.

   Heat oil in a deep frying pan. Drop a small piece of dough in it. If it rises immediately, the oil is hot enough.

    Fry the Bhature one at a time until puffed up and golden brown on both sides. Drain on absorbent paper.

    Serve the hot Bhature with the Chole, sliced onions, and lime wedges.
