Chole, also known as chana masala, is a hearty and flavorful Indian dish made of chickpeas cooked in a spicy tomato-based sauce. It's a staple in North Indian cuisine, often served with bhature or rice.

Rinse and soak chickpeas overnight in water.
Drain the chickpeas and add them to a pressure cooker with fresh water. Cook until they are soft and tender.
Heat oil in a pan. Add cumin seeds and asafoetida, and let them splutter.
Add onions and sauté until they turn golden brown.
Add ginger, garlic, and green chilies. Cook for a few minutes until the raw smell disappears.
Mix in chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until oil begins to separate from the masala.
Add cooked chickpeas and a cup of water. Simmer for 10-15 minutes.
Add garam masala and amchoor powder. Mix well and cook for another 5 minutes.
Garnish with chopped coriander leaves and serve hot.
