Pad See Ew is a popular Thai street food dish consisting of stir-fried wide rice noodles with soy sauce, garlic, vegetables, and usually includes a protein like chicken, pork, or tofu. This version uses chicken.
Soak the wide rice noodles in warm water until softened, about 20 minutes, then drain.
Heat a wok or large frying pan over high heat. Add vegetable oil.
Add garlic and stir-fry quickly until golden.
Add chicken and stir-fry until cooked through.
Push chicken to the side, add an additional dash of oil if needed, and pour the beaten eggs into the pan. Scramble the eggs lightly until set.
Add the drained noodles, soy sauce, dark soy sauce, fish sauce, and sugar. Stir everything together and cook until the noodles are heated through.
Add Chinese broccoli and continue cooking until the greens are wilted.
Season with white pepper, then serve hot, garnished with a lime wedge if desired.
