Preheat the oven to 350 degrees F (175 degrees C).
Sauté onions in olive oil until soft and lightly golden.
Stir in spinach and cook until excess moisture evaporates.
Remove from heat, and set aside to cool.
In a bowl, mix feta cheese, eggs, and season with salt and black pepper.
Combine cheese mixture with cooled spinach mixture.
Layer 6 sheets of phyllo dough in a greased baking dish, brushing each sheet with melted butter.
Spread the spinach and cheese mixture onto the dough.
Cover with 6 more sheets of phyllo, buttering each sheet.
Score the top layer of phyllo with a sharp knife to make serving pieces.
Bake in preheated oven for 30 to 35 minutes, until golden brown.
Serve hot.
