Cook rice until soft and set aside to cool.
Soak tamarind in warm water, extract the juice and discard the pulp.
Heat oil in a pan, add mustard seeds, dry red chilies, and curry leaves, and let them splutter.
Add asafoetida, turmeric powder, split green chilies, peanuts, and fry until the peanuts turn golden.
Pour the tamarind extract into the pan, add salt, and simmer until the oil begins to separate from the mixture.
Add the cooked and cooled rice to the tamarind mixture and mix well ensuring the rice is well coated.
Garnish with chopped coriander leaves and serve.
