Boil potatoes until soft, peel and mash them.
Add salt, red chili powder, garam masala, amchur, coriander leaves to mashed potatoes, and mix well.
Prepare dough by mixing wheat flour, salt, and water. Knead into a soft dough and let it rest for 30 minutes.
Divide the dough and potato mixture into equal portions.
Roll out one dough portion into a small circle, place a portion of filling in the center, and seal by pulling the edges together.
Flatten the stuffed dough and roll it gently to about the size of a small plate.
Heat a tawa or skillet and cook the paratha until golden brown spots appear on both sides, applying ghee or oil.
Serve hot with butter, curd, or pickle.
