Bhindi Do Pyaza is a popular North Indian dish made with Okra and double the amount of onions, cooked with aromatic spices.
Heat oil in a pan.
Add cumin seeds and let them splutter.
Add sliced onions and green chilies, sauté until the onions turn golden brown.
Add ginger garlic paste and sauté for 2 minutes.
Add turmeric powder, coriander powder, and red chili powder, fry for a minute.
Add sliced bhindi (okra) to the pan, mix well.
Cook covered on medium heat for 10 minutes, stirring occasionally.
Add garam masala and amchur powder, mix thoroughly.
Cook uncovered for another 5 minutes or until the bhindi is cooked thoroughly.
Garnish with chopped coriander leaves.
