Boil potatoes until they are half-cooked. Peel and prick them all over with a fork.
Heat oil in a deep pan and fry the potatoes until golden brown, then remove and set aside.
In the same oil, add cumin seeds and wait until they start to crackle. Then add ginger and tomatoes, frying until the oil starts to separate from the masala.
Add turmeric, red chili powder, coriander powder, and salt. Fry for a minute before adding water to make a smooth gravy.
Add the fried potatoes to this gravy, cover, and let it simmer on low heat until the potatoes are fully cooked.
Finish by adding garam masala and amchoor. Garnish with chopped cilantro.
Serve hot with chapati or rice.
