Beat eggs and season with salt and pepper.
Heat oil in a pan and pour in the eggs to make a thin omelette.
Cook the omelette until it's lightly browned on both sides, then remove and slice it into strips.
In another pan, heat some more oil and sauté the onions and garlic until they're translucent.
Add the cabbage, carrots, and bell peppers, and fry until vegetables are tender.
Mix the cooked vegetables with the omelette strips.
Place a portion of the mixture onto each egg roll wrapper.
Fold the sides of the wrapper and roll tightly.
Seal the edges of the egg rolls with a dab of water.
Heat oil in a deep fryer or large pan to 350°F (175°C).
Fry the egg rolls until golden brown and crispy.
