Peel and grate the carrots.
In a large heavy-bottomed pan, heat ghee over medium heat.
Add the grated carrots and sauté for 10-15 minutes until they start to soften.
Pour in the milk and bring the mixture to a boil. Reduce the heat and simmer, stirring frequently, until the milk is fully absorbed.
Add sugar and continue to cook on a low heat, stirring continuously until the mixture thickens and the fat starts to separate from the sides of the pan.
Add cardamom powder and mix well.
Garnish with chopped almonds and pistachios.
Serve warm.
