Grate the cauliflower.
Heat oil in a pan and sauté onions and green chilies until they are soft.
Add grated cauliflower, salt, turmeric powder, red chili powder, and garam masala to the pan. Cook until the mixture is dry.
Let the mixture cool.
Prepare dough by mixing whole wheat flour, oil, and water. Knead into a soft dough and let it rest for 30 minutes.
Divide the dough into equal portions. Roll one portion into a ball, then flatten it slightly.
Place a portion of the cauliflower mixture in the center of the flattened dough.
Gather the edges of the dough to encase the filling completely and pinch to seal.
Roll out the stuffed dough carefully to prevent the filling from coming out.
Heat a tawa or griddle. Place the paratha on the tawa and cook until golden brown on both sides, applying oil as needed.
Serve hot with butter, yogurt, or pickle.
