Kleftiko is a traditional Greek dish featuring slow-cooked chicken marinated in garlic, lemon, and herbs, wrapped in parchment paper to retain all its delicious juices and flavors.
Preheat the oven to 320°F (160°C).
In a bowl, mix olive oil, lemon juice, chopped garlic, rosemary, thyme, oregano, salt, and pepper.
Rub the lamb thoroughly with the marinade, ensuring all pieces are well-coated.
Place each piece of lamb on a large sheet of parchment paper. Add potatoes and onions around the lamb.
Wrap the ingredients tightly in the parchment paper to form a parcel, ensuring no steam can escape.
Place the parcels on a baking tray and cook in the preheated oven for 4 hours.
Remove from oven and let sit for 10 minutes before opening the parcels.
Serve hot, garnished with fresh herbs if desired.
