A delectable Thai dessert featuring sweet mango and creamy coconut sticky rice.
Rinse the sticky rice until the water runs clear to remove excess starch.
Soak the rinsed rice in water for at least an hour or overnight.
Drain the rice and steam it in a bamboo or cloth-lined steamer for about 20 minutes or until tender.
While the rice is cooking, combine coconut milk, sugar, and salt in a saucepan. Bring to a boil, then simmer until the sugar dissolves.
Once the rice is cooked, transfer it to a bowl and pour the hot coconut milk mixture over it. Stir well and let it soak for about 30 minutes.
Peel the mangoes and slice into bite-sized pieces.
Serve the sticky rice with mango slices on top and drizzle with additional coconut milk if desired.
