Heat oil in a large pot over medium heat.
Add whole spices (cardamom, cloves, cinnamon, bay leaves) and sauté for a few seconds until they become aromatic.
Add onions and sauté until golden brown.
Add ginger-garlic paste and sauté for another minute.
Add mutton pieces and sauté until browned on all sides.
Pour in yogurt and tomato puree, mix well.
Stir in red chili powder, coriander powder, and salt.
Cover and cook on low heat until the mutton is tender (about 60 minutes), stirring occasionally.
Add almond and cashew paste; cook for another 10 minutes.
